Aged a minimum of two years, this Parmigiano-Reggiano is the undisputed best in the world. As for the new, since 2005 American food artisans at La Quercia (Italian for "the oak") in Iowa USA have been making exquisite Prosciutto by salting and air drying pork using old-world methods. The pork used by La Quercia comes from sustainable Iowa producers who treat their animals and their land responsibly. Culinary guru Jeffrey Steingarten calls it "the best American or imported prosciutto I've ever eaten." We couldn't agree more. Eaten together, they are sublime!
