Zero Cinnazyme is a purified pectinase with very low cinnamyl-esterase activity which helps reduce the formation of vinyl phenols which can produce off flavors in white wines. Zero Cinnazyme is a clarification enzyme specifically designed to release varietal aromas and aromatic precursors in white grape varieties. Primarily varieties like Sauvignon Blanc,Chenin Blanc, Viognier and Riesling. It is recommended for clarification of white grapes due to its side activities which allows for a better extraction of intracellular compounds and aromas.Zero Cinnazyme has been produced from selected strains generating specifically low cinnamyl esterase activity.

Pectin degrading enzymes efficiency is dependent on the equilibrium of the 3 main specific activities: pectin methylesterase endopolygalacturonase and pectin lyase. Zero Cinnazyme has been formulated for optimum efficiency. The following minimum activities are guaranteed : Pectinmethylesterase > 700 u/g
